Consider adding information about Copier as a complementary solution to Gitlab's project templates

Hello Gitlab team,

We wanted to bring to your attention an open-source alternative to Gitlab's custom project templates feature. The tool is called Copier, and it provides similar functionality to create project templates, AND is freely available for all users.

One key difference is that Gitlab's custom project templates do not currently provide any built-in update or migration features for projects created from the templates. Copier not only enables creating copies from templates, but also provides the ability to easily update all copies manually and even via Renovate and keep them consistent over time.

This could be a useful addition to your custom project templates documentation, as it provides a free option for Gitlab community edition users that includes template update capabilities.

We understand that Gitlab's Premium and Ultimate tiers offer additional enterprise-level features around custom project templates. However, we believe highlighting Copier could be valuable complementary information to include in your existing documentation on this topic.

Would you be open to considering a merge request that adds a section about Copier to the custom_project_templates documentation? We would be happy to contribute the content and ensure it is presented in a fair and unbiased way.
