gitlab subchart chart settings no longer work

Ended up broken as part of https://gitlab.com/charts/gitlab/merge_requests/244

We are unable to change the defaults using gitlab.chartname

It looks like the aliasing does not work as I thought. (I think I was looking at an outdated doc, where the aliasing also controlled the filesystem name.

We started noticing this today as the intialRootPassword setting was no longer working.
