Cooked in two batches
Formed by:
- Soup, with noodles served separately
- Tomato, onion and peppers
- A fritter made with bread crumbs, garlic, parsley and egg, very typical in the capital
- Tomato, peppercorn and mint sauce
- A "pucherín" with which the broth is poured over the noodles
- Castilian chickpeas
- A careful selection of meats: blood sausage, Burgos chorizo sausage, Asturian black pudding, Iberian bacon and ham tip
- Cabbage, carrot, turnip and Galician "Mona Lisa" potato
Description
As you know, there are as many ways of eating cocido as there are houses where it is prepared. It doesn't matter how you like it best because at Casa Suecia they have found the solution... and they present it to you in a little pot so you can enjoy it as you like! It is slow-cooked on the grill for 10 hours, with a slow cooking time of less than 60º C. It is cooked by Javier Utrero, head chef at Casa Suecia, who follows his family's traditional recipe.
