I have used the defaults in all cases for graphics settings. The
camera used was one behind the car, like in this screen shot:

Very interesting, can you tell me the camera used ?

In order to smooth the frame rate, you can reduce the FOV in the
Options/Graphic menu, you can also reduce the values for smoke
and skid marks.
Hiding the Ggraph (g key), the counters (c key) and the
leader board (l key (lowercase L)) can save some fps too.

The frame rate depends a lot on the amount of scenery displayed,
that's why you'll find variations during a lap.

the sensitivity value is used as a power of the joystick values
scaled to the [-1:1] interval.
the formula is 
	steer = sign(joystick_val) * pow(abs(joystick_val), 1/sensitivity)

No, as you add cars you should see a drop in the frame rate but not
of that amount...
Could you tell me the track, cars and also the screen resolution
you used ?

In the xml file drivers/human/preferences.xml you'll find
attributes called "right steer sensitivity" and "left steer sensitivity"
you can try to set lower values but I'm not sure it works...
I'll add a sensitivity field in the control menus.

As long as your joystick is recognized under Linux, you should
be able to use it in TORCS.

I have just installed TORCS 1.1.0. I love it! Finally an open source
racing game I can play on my Linux.

I do have a few questions:

1. Is it normal that I get 50fps in practice mode but only about 25
   fps in race mode with one additional car ? My CPU is 700MHz Athlon
   and I have a GeForce 256SDR with NVidia's driver for XFree 4.1.0.

2. Is there a way to set sensitivity for the joystick ? It seems way
   too sensitive for my taste.

3. Does it supports racing wheels ? I have a Logitech Formula Force
