Repost from @nomeatdisco • MISO GLAZED MELTING SWEET POTATO ON A BED OR GARLIC YOGHURT 🍠  Who’s a big lover of miso?   This dish was an absolute banger… the sweetness of the potato compliments to umami saltiness of the miso and then the garlicky kick with the cooling yoghurt! Just perfect!   Ingredients  1 large sweet potato 1 tbsp miso paste (I used @clear 1 tbsp maple syrup  1/2 cup water  1 tbsp vegan butter  Vegan yoghurt 1 clove garlic   Method: 1. Start by searing off the sweet potato in some oil in a skillet until charred each side, 3/4 mins each side. 2. Whilst they’re charging, mix together the miso, water, maple syrup until all lumps have gone.  3. Add the butter to the sweet potatoes in the pan until melted and the pour over the miso mixture and make sure it gets underneath the

20min · 2 servings     Ingredients:  1 lb Sea bass, cod, or sablefish  2 tbsp White miso  2 tbsp Sake + a few more for cleaning the fish  2 tbsp Mirin  Instructions:  Pour a few tbsp of Sake on the fish first to clean it. Wipe off with a paper towel.  To prep the marinade mix together 2 tbsps each of miso, mirin, and sake.  Cover the fish with the marinade and let it sit for at least 30 mins but I recommend overnight.  To cook, place the fish under the broiler for 6-8 mins or until nicely caramelized.  Serve with rice and greens of choice!

Miso Gochujang Glazed Salmon aka the best one I’ve ever made…I promise 😍. Gochujang is a Korean fermented chili paste and it is to die for.

Ingredients:
 • 1 lb salmon filets.
 • 3 tbsp white miso.
 • 3 tbsp gochujang.
 • 2 tbsp mirin.
 • 1 small garlic clove.
 • 1 tsp fresh ginger.
 • 1 tbsp rice vinegar.
 • 3 tbsp maple syrup.
 • rice.
 • white & black sesame seeds.

•green onion.

Directions:
 • 1.- combine the miso, gochujang, mirin, rice vinegar, maple syrup, ginger & garlic.
 • 2.- pat dry the salmon and cover in the marinade for about 30 min. Leave it room temp so it gets a better sear.
 • 3.- preheat a pan for 2-3 min. Add the salmon skin side down and broil on high for 3.5 min, add some of the glaze and broil another 1-1.5 min. This will make it med rare.

¼ cup rice vinegar

2 tablespoons sweetener of choice: honey, maple syrup or brown sugar

2 tablespoons reduced-sodium soy sauce

2 cloves garlic, minced (or 1 teaspoon garlic powder)

1 tablespoon fresh ginger root, grated (or 1 teaspoon ginger powder)

Trumpet Mushrooms & Miso Chili Glaze...promise me you will try these? The mushrooms were delicious BUT the real star here was that miso chili glaze, I have made a variation of this millions of times before, but I think that the reason it was SO much better this time is because I used Gochujang (Korean chili paste) & the Korean BBQ seasoning by Spice Hunter.
 • I don’t use spice blends often but when I do, trust me ok? It added such a good flavor but in a subtle way if that makes sense. There is tamari powder in there which adds so much umami, and then the ginger...anyways it is perfectly balanced and a must!

 • 5-6 trumpet mushrooms. 1⁄4 cup tahini.
 • 1-2 tbsp gochujang.
