The magical ingredient that makes this meal absolutely incredible is Chineses sausage, called Lap cheong. This shelf-stable, dry sausage gets plump and hydrated as the rice cooks, and rice absorbs all that delicious fat and flavors from the sausage.
Chop up the sausage and mix it up with rice with scallions and a dash of soy sauce for the PERFECT low-effort meal that I can eat literally every single day.
And, of course, don't forget to add chili crisp fried eggs on top!
