My version is south Indian ;) *Ingredients* • 6-7 large potatoes, peeled, washed, and diced • 3-4 tbsp of vegetable oil • Salt as per taste • 1/2 tsp turmeric powder 2-3tbsp tbsp sambar Masala (store bought or homemade, both will do) *For the Tempering* • In a small tadka Pan, add- • 1-2 tbsp ghee/oil • 2-3 dry red chilli, roughly chopped • 1-2 tsp of asafoetida • 1-2 tsp of mustard seeds Handful of curry leaves *instructions* • 1. In a pan, add vegetable oil, and once the oil is hot add the potatoes. • 2. Now add turmeric, sambar masala & salt as per taste. • 3. Mix well, then cover & cook on medium to low flame for 15-20 minutes or until soft. • 4. Now remove the cov
