While riding on the Moonview Highway track, some of the trucks are transporting items from other race tracks. For example, milk from Moo Moo Meadows.

If you play as a Mii on some tracks like Luigi Circuit, some track elements are replaced with Miis. For example, the sphinx in Dry Dry Ruins is usually a Yoshi's head is you play as any other character. But if you play as a Mii, the Yoshi head is the replaced with a Mii head.
In this game, if the player keeps driving backwards in a race for two weeks (this can be done the quickest on SNES Ghost Valley 2 due it being the shortest race track in the game), the lap counter will go above the limit of 3 laps. An interesting thing about this bug is that if it's performed, Lakitu's normally unused lap graphics actually end up being used.
