Except no, there weren’t just nine chefs left in the competition. This week not one, but two entered the show from “Last Chance Kitchen.”

So what happened in “Top Chef” season 21, episode six, “Chaos Cuisine,” when the size of the cast actually grew?

The episode begins with some “power bottom training” in the gym with Manny and Kevin, who have become close over the course of the season, bonded over exercise much like Danny and Rasika, but also bonded over their struggles in the competition.

“Top Chef” hasn’t finished “Last Chance Kitchen” for the season just yet, but the second-chance after show has reached a major milestone. Charly Pierre entered “Lck” this week after he was eliminated from the main competition in “Supper Club,” where the cheftestants had to team up to make traditional five-course Supper Club meals. Pierre was in charge of the fish dish on the losing team, and he drastically overcooked it, so he was cooked. “Being cut on ‘Top Chef’ sucked,” he said. Now as he sought redemption, “I’m doing it for Haiti, doing it for New Orleans, and my restaurant and my sous chef and my cooks. We’ll do it one challenge at a time.”

Another episode of “Top Chef: Last Chance Kitchen,” another opportunity for Tom Colicchio to explain to eliminated contestants who the hell the new guy is: Soo Ahn, this season’s secret 16th cheftestant. This was a triple threat match, though, since this week’s “Top Chef” episode, “The Wright Way,” ended in the double elimination of Kaleena Bliss and Alisha Elenz. As of this writing the consensus of Gold Derby users is that Charly Pierre will be eliminated. He hasn’t really distinguished himself in the competition thus far, flying somewhat under the radar through the first few episodes. He has mostly been safe through challenges, but he also cooked bottom dishes on two occasions. In “Living the High Life,” he was in the bottom three for the Elimination Challenge...

After two “Top Chef” challenges there have been two eliminations: David Murphy in “Chef’s Test” and Valentine Howell Jr. in “Living the High Life.” So they went head-to-head in “Last Chance Kitchen” for a chance to return to the competition … Except they didn’t. David was nowhere to be found. Perhaps his bottom-three cookoff in “Chef’s Test” served as its own kind of “Last Chance Kitchen,” because there’s no mention of him at all in this week’s first “Lck.” As far as I can tell he’s out for good. Instead, Valentine had to battle Soo Ahn, a secret 16th cheftestant who the show added to the competition specifically for “Lck.” He’ll have to win five times for a chance to enter the main competition at all. Tom Colicchio gave him and Valentine a challenge that flipped Valentine’s last challenge on its head.

“Top Chef” wasted no time throwing the contestants’ into the heat of the competition, going straight into the Elimination Challenge in last week’s season premiere, “Chef’s Test.” Some chefs passed their test with flying colors while others struggled. Manny won the Elimination Challenge in “Chef’s Test,” so he has immunity from elimination, but he doesn’t want to get too relaxed.

Only five Gold Derby users correctly predicted that David Murphy would be the first cheftestant eliminated from “Top Chef” season 21, but that’s pretty impressive considering we hadn’t seen any of the contestants in action yet. “Top Chef” started its 21st season last week with 15 cheftestants vying for the grand prize, but the show revealed there will be a 16th contestant entering the kitchen: Soo Ahn will fight his way through “Last Chance Kitchen” for a chance to win a spot on the main show and ultimately win the whole competition. All is not lost for chefs who have a bad day on the Bravo cooking competition. “Last Chance Kitchen” gives them a chance to make a comeback. But it’s not easy. They have to go head-to-head against another eliminated chef to prepare a dish under a tight time limit. The loser is eliminated from “Top Chef” for good. But the winner gets to continue through “Lck” until finally a chef is selected to return to the competition.

Wednesday’s season 21 premiere of Top Chef is a hard reset in a number of ways, most obvious among them being the new host. For the first time in 19 seasons and just as many years, it isn’t Padma Lakshmi gently but decisively telling an unlucky hopeful to pack their knives and go. It’s Kristen Kish.

The season 10 winner, initially kicked off the competition before fighting back to the finale on spin-off Last Chance Kitchen, emerged as an early and clear favorite to fill Padma’s shoes when she announced her exit last summer. Kish has been a familiar face to the franchise since her 2012 win, expanding her TV horizons by hosting the Netflix update of Iron Chef and National Geographic’s Restaurants at the End of the World. But those who tune in to the start of Top Chef‘s Wisconsin-set cycle will notice that Kish isn’t the only change.

When Top Chef makes its long-awaited return for its historic 21st season, it’ll be with a new host, chef and TV presenter Kristen Kish. You may not only recognize Kish from her shows on the Travel Channel, TruTV, and National Geographic but also as a former Top Chef competitor.

In fact, Kish won her season of the competition show, after first being eliminated in season 10 but then making a comeback in Last Chance Kitchen to ultimately beat out 23 other chefs. It’s an impressive resume, to say the least, and there’s arguably no one more qualified to take on the job of host and judge on Top Chef than someone who’s actually been through the gauntlet.

As great as it is to see Kish as the new face of Top Chef, some longtime fans might be left wondering why former host Padma Lakshmi decided to step down from the show.

After 20 seasons, “Top Chef” has gone through some significant changes. Most notably, former champion Kristen Kish replaces longtime host Padma Lakshmi for Season 21, which also introduces its first major twist — at least since the introduction of redemption with “Last Chance Kitchen” — to the overall gameplay in two decades.

“It was a great opportunity for us to take a look at what we’ve done for the first two decades and start thinking about the next two decades,” Ryan Flynn, SVP of Current Production for NBCUniversal Entertainment and Streaming, told IndieWire. “With Padma moving on, it really felt like a great exclamation point” on that period of the franchise.
