Edit
The most common version of the "honeycomb and jackass" joke that Tyrion never manages to finish is the following: A dwarf travels around with a honeycomb and a jackass. When asked why, he answers: "These are my only possessions after my wife left me. We had found a genie that granted us three wishes. My first wish was to give her a house like a queen, so the genie gave us this honeycomb. My second wish was to let her have the best ass of the whole country, so the genie gave us this jackass. And my last wish was for my penis to reach my knees, so the genie turned me into a dwarf!"
For the third time, Tyrion tries to tell his humorous story of bringing a jackass and a honeycomb into a brothel. His first attempt was part of his "confession" to Lysa in A Golden Crown (2011), and his second attempt was to tell it to Missandei and Grey Worm in No One (2016). All three times he is interrupted and never finishes the story. This is also the final dialogue spoken in the series.
Dave Hill, one of the writers of the season, stated it was originally planned for Jorah Mormont to survive the series and join the Night's Watch with Jon, paralleling his father Jeor Mormont who served as Lord Commander, but it was ultimately decided to kill off the character during the Battle of Winterfell in The Long Night (2019). Hill stated, "the amount to logic we'd have to bend to get Jorah up to the Wall and get him to leave Dany's side right before [the events in the finale] ... there's no way to do that blithely. And Jorah should have the noble death he craves defending the woman he loves."
As seen in Game of Thrones: The Last Watch (2019), the scene where Jon and Davos confront Grey Worm in the streets of King's Landing was the final scene that Kit Harington, Liam Cunningham, and Jacob Anderson filmed for the series. Harington immediately broke down in tears after realizing that his time on the show was up and he thanked cast and crew for their dedication.
The last scene of the show is at the same location where the very first scene of the show was.
