When Steve Fox gets shot there are no bulletwounds visible, and the camera moves away from him. When it turns back on him, Steve does have bulletwounds even though the shooting had already stopped. Notice the obvious shots in the chest and arm.

When Jin is fighting Marshall Law, Law's gloves are missing in several scenes.
Miguels tattoo switches arms in the scenes when he is waiting for Jin to enter the arena.
In Anvil when Christie took care Jin during his injuries her face is shown in serious looking, but the next scene where Heihachi Mishima shows up she raised her head to Mishima but her expression is shown with giggles smile.
When Jin's fight with Law is being watched in the bar, the TV shows some shots that were clearly filmed inside the cage but there is no camera man in the cage.
There are 10 fighters participating in the Iron Fist tournament. This can't lead to a conventional tournament because after the first round there would be 5 people left and there is no real format to make that work as semi-finals.
Anna Williams is a participant in the tournament yet she does not have a match at all and Yoshimitsu easily enters the second round.
