Catherine began acting at 5 years old as Lulu in the Broadway National Tour of Waitress, the hit musical by Sara Bareilles and Jessie Nelson. She made her professional stage debut at the historic Hollywood Pantages Theatre alongside her identical sister Elizabeth Last who alternated as Lulu.
Immediately following their run in Waitress, the sisters worked together again as series regulars, sharing the role of "Hannah" in MGM's television reboot of the classic '80s comedy Mr. Mom (2019) .
Catherine recently played Jason Alexander's daughter, Shprintze, in Fiddler on the Roof (McCoy Rigby Entertainment, La Mirada Theatre) and coincidentally in the same year played Jerry Seinfeld's daughter, Annie Cabana, in his directorial debut for Netflix, A Batalha do Biscoito Pop-Tart (2024) . She has guest starred on ABC's Economia doméstica (2021) and voices the role of Greta in Perninha em Obras (2022) for HBOmax. In addition to Waitress and Fiddler on the Roof, her favorite theatre credits include: Frozen (Young Elsa) 5-Star Theatricals, Sunday in the Park with George (Louise) CCAE, The Secret Garden (Mary Lennox) Chance Theater, The Sound of Music (Brigitta) Highlands, Matilda (Matilda) McCoy Rigby, The Wizard of Oz at Musical Theatre West, Joseph and the Amazing Technicolor Dreamcoat at La Mirada Theatre, and Annie at OBC Theater. Catherine was an original cast member in the Los Angeles premiere production of Born to Win, a comedy about the competitive world of child beauty pageants. She also originated the role of Anna Muir in the new musical adaptation of The Ghost and Mrs. Muir at the Glendale Centre Theatre.
