She was born in Bunbury, Western Australia and is of Maori, Chinese and English descent.

Her first film was Mad Max: Fury Road as one of the 5 wives. Before being cast she knew nothing of the series, her father told her about it since he was a big fan of the previous movies.

Courtney was discovered by Christine Fox at her school fashion show at the age of 11. At 16, Courtney was signed to Vivien's Models. She later briefly joined Next Models, before leaving to pursue her film career.

She participated in Mercedes-Benz Fashion Week Australia in April of 2013. She has done swimsuit modeling for Tigerlily.

She was cast in the 2016 film Gods of Egypt alongside Gerard Butler and Nikolaj Coster-Waldau.
