As a student, she gained media experience by appearing on WDR radio together with Marius Müller-Westernhagen. She attended high school and graduated from high school. She then trained at the Bochum Drama School from 1971 to 1974. This was followed by five semesters of studying German and fine arts. Sabine Postel made her debut as an actress at the Oldenburg State Theater. This was followed by engagements at the stages in the city of Essen and at the Cologne Theater. At the same time, she worked as a radio play and voice actress. In the early 1980s she switched to television and gained wider fame. In 1982 she started her television career with the film "The Task of Dr. Graefe". Four years later she appeared in the lead role in the television film "The Proposal" directed by Rolf Busch. For this, the artist not only received a lot of critical praise, but also the Jakob Kaiser Prize in the "Best Television Program" category, which was awarded by the Federal Ministry for Pan-German Issues.

In 1991 she married the literary scholar and journalist Dr. Otto Riewoldt. The following year she appeared as the betrayed wife Susanne in the comedy "Sleeping Dogs" directed by Max Färberböck. For her commitment, Sabine Postel was awarded the Television Prize of the Academy of Arts, and the film itself was awarded the "Telestar" Prize in 1992 in the "Best Television Play" category. In the same year, 1992, their son Moritz was born. The actress played her role as mother and music teacher Sybille Schefer in the ARD evening series "Not from Bad Parents" so convincingly that it earned the then 40-year-old the German media award "Bambi" in 1994. Three years later, in 1997, Postel made her debut as Inspector "Inga Lürsen" in Radio Bremen's "Tatort" series. She also investigated the 500th and 600th "Tatort" anniversary episodes. From 1999 to 2002 she appeared in the television family series "Die Nesthocker - Familie zu gaben" as divorced mother Marianne Brandt, which further boosted her popularity among TV audiences.

The following year, her husband died of cancer in Cologne at the age of 54. Since 2008 she has been in front of the camera alongside Dieter Pfaff as the lawyer "Isabel von Brede" in the TV series of the same name. She also appeared in the 2010 Bavarian TV film "Until Nothing Remains", which takes a critical look at Scientologists. In 2011, the actress investigated again in the "Tatort" episode "The Illegal Death" as Inspector "Inga Lürsen".
