Her parents separated in the early 1960s and had children by other people: Danny Huston, her father's son with Zoe Sallis; and Allegra Huston, her mother's daughter with John Julius Norwich. Despite this, they never divorced.

While filming La famiglia Addams (1991) turned Raul Julia's frightening medical issue into a laughing matter after Julia's eyeball suddenly fell out of his head. Julia was able to go to set the next day despite his shocking injury. Huston pulled a prank on her beloved co-star; she bought out a novelty shop of fake dangling eyeballs. The next day, everyone on set had these fake eyeballs coming out of their head.

Frances Conroy, Liza Minnelli, Eartha Kitt, Olivia Hussey, Geneviève Bujold, Sigourney Weaver, Starr Andreeff, Linda Blair, Fiona Fullerton, Faye Dunaway, Jodie Foster, and Vanessa Redgrave were all considered for the role before it went to Huston. Ultimately, Dahl was pleased with the outcome.

To study the character Maerose Prizzi, to master the accent and characterization of a mafia daughter, she went to a Brooklyn church.

Contrary to what many people assume, her childfree status is not voluntary. In a 1998 Lifetime Intimate Portrait (1990) episode, she said that she's tried to have a baby on several occasions. Elaborating on the subject, Huston wrote in her autobiographies that she failed to conceive with husband Robert Graham as well as former boyfriends Bob Richardson and Jack Nicholson. She started trying to get pregnant with Richardson when she was still in her teens, and kept trying, on and off, until her mid-40s, even undergoing in-vitro fertilization.
