At least Kitchen nightmares was a bit more believable... but this whole concept is insane. Obviously scripted and staged. They try to sell the BS by saying they were tipped off/given a key by an "insider." You can't just have a hidden cameras everywhere without the owners of the restaurant and building being fully aware of it. Obviously the "workers" sign releases so they can be shown on TV after the fact. But this show wouldn't film with the risk of "what if everyone we film refuses to be shown on TV?!" So, it seems like all of the workers (cough actors) have agreed to appear on the show beforehand.
No restaurant owner would want to expose their restaurant like this if it was truly this disgusting. Because who would trust them to not fall back into their old ways after the show was over? The businesses would collapse and they wouldn't be able to open another restaurant for the rest of their lives. The employees? They wouldn't want to be shown being clowns or being disgustingly because that also hurts their future employment.
"You were on a spy show! Look at all this gross stuff... okay, now sit down and let's do solo interviews... in the exact outfit(s) you're wearing in the undercover footage..."
It would be more believable if Ramsay was in a spy van and they sent into other actors/friends of him to go into the restaurants under the guise of doing reviews or "helping improve the business" and then having Ramsay do the big reveal "it is really me, here is all of the things you need to change" and let the second half of the episode be him helping/improving things.
