Simple answer is, they actually did cover (some places) in ash. Due to the covid pandemic, this place that is usually flooded with tourists, now had very little visitors, which gave them the opportunity to do so. I'm not so sure there was no use of CGI though, but Vík does in fact have a black sand beach, and some rough landscape that lends itself perfectly for the setting.
