Tasty and easy — next time we should do more veggies (either more peppers or zucchini or something…)

2025-07-07T16:44:16Z: Yesterday I made a really good dinner. I got like at least 3 wow's from Rob and it may have been one of my favorite dinners I've ever made.
- Marinated chicken tenders in 1/4 cup red wine vinegar, 1/4 cup olive oil, 1/4 soy sauce, 2 tsps italian seasoning, s+p
- Grilled chicken and corn on the cob
- Cut the corn off the cob and mixed it with butter and s+p
- Served the chicken and corn with a simple salad: farmer's market lettuce, cherry tomatoes, parmesan, s+p with a homemade dressing of 4 tbsps olive oil, 2 tbsps balsamic vinegar, 1 tbsp dijon mustard, 1 tbsp maple syrup, ~1/2 tbsp italian seasoning and s+p

We also had some watermelon + basil + salt salad that Rob made. 10/10 summer dinner. We need to do more farmer's market ingredient dinners going forward

Fair enough! But I liked this! The chicken was good imo and everything went well together. I just wish it stayed together better. Also Rob's mom said that the burger sauce was really good and I agree!

2025-06-06 21:43: Easy chicken parm - bought frozen chicken strips, then cooked them according to package directions. Once they were done, I topped with marinara and Parmesan cheese and put it back in the oven for ~3 min. Served over arugula tossed in olive oil and lemon juice. 

Really good for how low effort it was! Rob said it was dinner material 👀

2025-05-24 19:56: Made some tofu “sushi” bowls for lunch last week. Rice + tofu were made via the steps in [this recipe](https://www.loveandlemons.com/sushi-bowl/#wprm-recipe-container-68046) but I chose the toppings (carrots, cucumbers, scallions, spicy mayo) based off an Instagram post that I saw and what we had in our fridge already. Was really yummy and satisfied my tofu craving but I wish the tofu was crispier! I need to figure out how to do that.

2025-05-04 22:25: Carrot cake baked oatmeal cups for breakfast this week

These were so much better than I expected!! Like actually delicious. I was skeptical about the recipe calling for prunes instead of raisins but they were actually great. Color me surprised. 

Swaps: used 4 tbsp flaxseed + 4 tbsp water instead of the eggs bc I’m out of eggs again 🤦🏻‍♀️. And only used 1/4 cup maple syrup (again, bc of a household shortage) and they were plenty sweet.

I like making these vegan sweets - they’re a bit easier than dealing with getting butter and eggs to the right temperature! But definitely not quite as good 😅

Swapped in peanut butter for tahini in this recipe and you can definitely taste the pb — I don’t like tahini so I worry if I made the original I could taste the tahini and I wouldn’t like that.

2025-01-26T18:31:09Z: Carrot muffins: good base. I used the food processor to try and easily grate the carrots and I regret it. I should actually put in effort to grate them next time. Modifications I made to recipe: pumpkin spice mix instead of the specific spices (good!), no whole wheat flour (ain't nobody got whole wheat flour), no raisins (we're out and Rob doesn't like them but I think these would be better with the raisins).

2025-02-07 18:00: ATK corn muffins & chili. SO unphotogenic but turned out great!! I did the full two hour simmer on the chili and I think it was worth it -- just requires a little thinking ahead. The muffins were good, not as sweet as TJs mix and could've been moister (more sour cream next time?) but got the job done in terms of being freezer-prep friendly.

2025-02-14 18:00: Steak, mashed potatoes and green beans for V-Day! I got two ~.8 lb ribeyes, seasoned with salt and pepper, seared them in butter + olive oil and then finished them off in the oven @ 400. I used our in-oven thermometer to get them to the right temp and it worked GREAT. Will continue doing that going forward. 

Green beans were salt + pepper + olive oil in the oven @ 400 for ~20 min. I thought they were overdone but Rob liked so... *shrug*

Mashed potatoes were microwavable ones from "simply potatoes" muahahah (they're actually really good)

Made these last weekend for the first time and had one for breakfast every day this week. They're delicious, easy to prep and just the right amount of food to have pre-Reese walk. Last time I made them slightly off recipe due to ingredient shortages (I swapped some oats for instant oats and some honey for maple syrup). Made them by the book today and we'll see how it pays off -- will update. Rob suggested toasting the oats as a future experiment (for a texture improvement)

2025-03-22T21:47:22Z: Made these [baked meatballs](https://www.allrecipes.com/recipe/268249/italian-baked-meatballs/) last week. Flavor was great and I was happy with the effort level but texture was too smooth. I think the texture issue was due to the method that this receipt suggests for combining the meatballs (mixing in breadcrumbs with water then mix that with meat). Next time I'd try with the same ingredients but mix the breadcrumbs and cheese with the meat and then fold in the eggs and water

Technique was good and made good consistency sauce. Was pretty easy to make too! Next time I want to pan fry a bit better to make the chicken crispier. 
2025-03-27 03:53: Monday dinner was simple but tasty: spatchcocked chicken from salt fat acid heat, pesto pasta and roast green beans. I salted the chicken in the AM with kosher salt and it turned out great - I think the timing and the copious amounts of salt were both useful. The green beans were in the oven for the last 10 min of the chicken roasting plus its 10 min rest. Pesto pasta was leftover pasta and store bought pesto all warmed in the microwave 🤫

Also I think this would be a great dish to make if we were having people over. We otherwise just don’t need this much coffee cake in our house 😂

2025-03-27 04:02: Creamy garlic shrimp with ricotta ravioli from Hello Fresh — I feel pretty weird posting this bc it’s Hello Fresh and I didn’t even cook it!! Not sure I’d make the recipe exactly as written again but it was great inspo. We discussed using smaller tortellini/ravioli next time, a lighter sauce (white wine base instead of cream base?) and that tomatoes could be a nice addition. The cheese + spinach combo of this was a highlight

I also like how easy this recipe is (no softened butter, no mixer required etc) and it’s a cherry on top that they’re gluten and dairy free while still tasting 💯. Not as good as the thumbprint cookies but it’s probably not fair to use those as a measuring stick (bc they’re so good 🥵)

2025-04-29 19:39: 🚨🚨original recipe alert🚨🚨 onion and broccolini egg bites! 
- sauté 1 yellow onion
- steam your extra farmers market broccolini in the microwave for 2-3 min
- whisk 9 eggs with 1/2 tsp salt, 1/2 tsp garlic powder, some cracked pepper
- divide broccolini, onions and egg mixture into greased muffin pan
- 350 degrees for 22 min

Turned out pretty good tbh. Would work with any veggies and I wish it had cheese in it but I’m avoiding dairy rn 😢
